Tuna Crostini for Lazy Weekends

 I love weekend breakfasts. You never need to rush prep time and you can eat at a sleepy pace.

Another thing I love about it? It always ends up becoming brunch as I don’t really need to wake up early. Yeah, that’s the laziness in me taking reign -- but if you don’t get to be lazy and enjoy weekends, there’s really no point looking forward to it.
 


So, here’s a little couch-potato tip this coming weekend : Turn off your phones come bedtime, and make some Tuna-cilantro-cheese Crostini when you wake up!

Crostini literally means “little toasts”.It is typically a ½ inch piece of sliced bread grilled and brought to life by toppings. Toppings may be as simple as a brush of olive oil and S&P (Salt and Pepper)  to meats, cheese, herbs - go crazy! For
this recipe, it had been heavily influenced by the leftover menu and cupboard stash who dictated the flavors that will star in this brunch.

You will need:

1 French baguette, sliced into 1cm pieces
1 canned tuna in brine, drained
¼ cup shredded cheese of your choice
bunch of sliced cilantro
virgin olive oil for drizzling
salt and pepper to taste
1 garlic clove, peeled and cut in half
a willing volunteer to follow your bidding

To do it:

Grill slices of baguette, while still hot, rub with the sliced part of garlic.
drizzle with a little olive oil
Top with tuna, sliced cilantro and cheese
Finish with salt and pepper to taste

Effortless right? As it was that, I paired it with some mixed greens in balsamic vinegar and sliced fruits. Of course, you can have it for dinner with a good wine and a
smashing selection of movies.




T minus 2 hours 45 minutes to the weekend.
Have a blast! (just not in the kitchen.)
